  • Heat oven to 350°F.
  • Brown meat in large skillet; drain. Return meat to skillet. Stir in 1/2 cup each salsa and cheese.
  • Spread 1/2 cup of the remaining salsa onto bottom of 13x9-inch baking dish sprayed with cooking spray. Spoon meat mixture down centers of tortillas; roll up. Place, seam sides down, in baking dish; top with remaining salsa and cheese.
  • Bake 20 min. or until heated through.

Make Ahead

Assemble enchiladas and place in baking dish as directed; top with remaining salsa and cheese. Refrigerate up to 24 hours. When ready to serve, bake, uncovered, in 350°F oven 30 min. or until heated through.

Rated 5 out of 5 by from I used 1 1/2 pounds of ground turkey and added a can of rinsed, drained black beans. I used 1 1/2 pounds of ground turkey and added a can of rinsed, drained black beans. I also added 1/2 a packet of Taco Seasoning after the salsa. I used 8 oz (1/4 loaf) of 2% Velveeta cubed to the meat mixture instead of the Cheddar. I also used Pam on the bottom of the pan after other reviews said NOT to use the salsa on the pan. Lower fat, tasted GREAT! Served topped with more salsa, Nonfat Greek Yogurt (tastes JUST LIKE sour cream) and diced green onion. Quick and delicious!

Rated 5 out of 5 by from This was great! This was great! My boyfriend aand I absolutely loved it. I didn't follow the recipe exactly. i used about half the salsa and added a can of refried beans. I layered the bottom of the pan with the salsa and about a third the can or refired beans .. added another third of the can refried beans to the meat mix and then spread a some of the remaining meat mix and a little bit of the refried beans across the top with the remaing salsa and cheese. Came out awesome!!

Rated 4 out of 5 by from This was easy and tasty. This was easy and tasty. I used ground venison instead of beef and low-carb tortillas, and it turned out wonderful. Preparing it a day ahead allowed time for the tortillas to soak up the salsa, so next time I will try either more salsa in the dish or a little cooking spray first. I used a medium heat salsa, which gave it nice flavor, and served with sour cream. This is definitely a recipe to make over and over, and to experiment with.

We loved this recipe - I made it without salsa though, I used taco cheese instead of cheddar & I also used a packet of fajita seasoning in the ground beef - it gave it the salsa flavoring, without the salsa (that my husband doesn't like) - I've also used it with Con Queso instead of the salsa & only put the cheese inside the beef & not on top because of it - Very good as well!!

I've made this a couple times now and it's always a crowd pleaser, even with picky eaters!! I love that it's so quick to put together and I usually always have the ingredients on hand, so that's awesome as well. I was pleasantly surprised the first time I had it...I thought it'd be 'ok' but it turned out to be DELICIOUS!!

Rated 5 out of 5 by from This recipe was delish! This recipe was delish! It was super simple too! My fiance and I really enjoyed it! I doctored it up a bit by adding half a packet of taco seasoning to the meat when it was cooking to give it more flavor and I also added a few dried onions to the meat to add flavor. Everything else I followed as the recipe said and it turned out amazing! Will definitely make again!

Rated 4 out of 5 by from This is a really good recipe. This is a really good recipe. It was super easy and had just a few ingredients. I did add an onion when I browned the beef. I made it earlier in the morning, refrigerated it, and then baked it for about 30 minutes. My family really liked it. Beware: It is more casserole-type and not restaurant-type enchiladas. But, it's still really good!

Used taco seasoning, basil, and a lil more garlic pwdr along w/ 2 big heaping tablespoons each of corn and black beans....didn't have but 1 cup of cheddar chz so i used half in meat mixture and half on top...I used mozzarella for the rest of the meat mixture and sprinkled more on top as well...Hubby said he really enjoyed it :)
