Substitute 4 small boneless skinless chicken breast halves (1 lb.) for the chopped cooked turkey. Heat small amount of oil in large nonstick skillet on medium-high heat. Add chicken; cover. Cook 5 min. on each side or until done (165°F). Transfer to plate; cover to keep warm. Bring broth and broccoli to boil in large skillet; continue as directed, returning chicken to skillet along with the rice and VELVEETA.
How to Cube VELVEETA
Cut VELVEETA into slices about 1/2 inch thick. Then, cut each slice crosswise in both directions to make cubes.
