Cheesy Broccoli Rice & Turkey

  • Bring first 3 ingredients to boil in large skillet in medium-high heat; cover. Simmer on low heat 5 min.
  • Stir in rice and VELVEETA. Remove from heat. Let stand, covered, 5 min. or until rice is tender and VELVEETA is melted. Stir until well blended.

Substitute

Substitute 4 small boneless skinless chicken breasts (1 lb.) for the chopped cooked turkey. Heat small amount of oil in large nonstick skillet on medium-high heat. Add chicken; cover. Cook 5 min. on each side or until done (165°F). Transfer to plate; cover to keep warm. Bring broth and broccoli to boil in large skillet; continue as directed, returning chicken to skillet along with the rice and VELVEETA.

How to Cube VELVEETA

Cut VELVEETA into slices about 1/2 inch thick. Then, cut each slice crosswise in both directions to make cubes.

Rated 4 out of 5 by from I didn't have any velveeta so I used shredded cheddar cheese. I didn't have any velveeta so I used shredded cheddar cheese. That was okay, but I think the velveeta would have added some more creaminess to it. Even so, I think if I made it again I would do like another commenter did and add a can of cream of chicken soup - the whole thing was too dry and I even had to add a bit of water when I noticed the chicken broth got soaked up too quickly by the rice. Overall good flavor and my husband who doesn't like broccoli was able to tolerate it. =)

Rated 2 out of 5 by from This was really easy to make. This was really easy to make. I used this recipe with leftover turkey. It was a little bland and didn't really mask the fact that I was eating leftover Thanksgiving turkey. There are better ways to use your leftover turkey....

Rated 4 out of 5 by from Great - and super easy to make! Great - and super easy to make! I made it with chicken instead of turkey. I just cooked the chicken right in the same skillet, then added all the other ingredients according to the recipe. It's a keeper!

We made this with Minute Rice and used 1 1/2 cans of broth instead of just one and the 8oz pkg velveeta cheese and it came out really good!!! Will for sure make again!! It was a big hit!!
