  • Heat oven to 375°F.
  • Spread cracker crumbs onto bottom of 9-inch square baking dish sprayed with cooking spray.
  • Microwave milk, VELVEETA and cream cheese in large microwaveable bowl on HIGH 1-1/2 min. or until cheeses are completely melted and mixture is well blended, stirring after each minute. Whisk egg yolks and chives until blended. Stir into VELVEETA mixture.
  • Beat egg whites in small bowl with mixer on high speed until stiff peaks form; gently stir into VELVEETA mixture. Pour into prepared dish.
  • Bake 20 to 25 min. or until top is puffed and golden brown. Serve immediately.

A surprisingly good cheese sauce. Needed salt and pepper. Cracker crust and chives both unnecessary. Can be baked in a souffle dish, as well. I missed getting this review in before I added the update where I warmed leftover souffle in microwave with additional grating of sharp cheddar. Very flavorful. Cream puffs? Hmmmm... "Too eggy"? It's a souffle! I'll be using this recipe as an alternative to the higher fat/calorie version (w/cheddar cheese sauce).

It was good, but the texture threw us off guard. My husband didn't care for it, but my son and I liked it. I think it is better as a breakfast-- like the fluffiest best scrambled eggs you've ever had. I don't think I'll serve it as a side again.

Rated 5 out of 5 by from So yummy. So yummy. There's no butter in it yet it's so buttery tasting. I'm a low carb eater so I made some adjustments. 1/4 C cream, 1/4 C water instead of milk. Almond meal instead of Ritz. Net carbs is 5, perfect for all stages of low carb cooking.
