  • Microwave cauliflower in 1-1/2-qt. microwaveable ovenproof dish on HIGH 3 to 4 min. or until crisp-tender.
  • Add 2% Milk VELVEETA, cheddar and nutmeg; mix well.
  • Top with remaining ingredients.
  • Bake 12 to 14 min. or until heated through.

Substitute

Substitute broccoli florets for the cauliflower florets.

I made this with a combination of cauliflower and broccoli for my spouse and myself, but I would definitely do this for a company meal, too. I loved the crunchy topping, and for once the cheese stayed creamy and stuck to the veggies, instead of melting and getting all watery, like it used to when I added it to microwaved cauliflower. Husband loved it!

I didn't have cornflakes or almonds but substituted crumbled ritz crackers for the topping. It was awesome. The entire dish was gone on the first pass through. The requests have already been made to bring it for our families Christmas dinner. Highly recommend and sooo easy.

Rated 5 out of 5 by from I just made this and it is absolutely delicious! I just made this and it is absolutely delicious! I didn't use the almonds or the nutmeg. I used regular sharp shredded cheese, and corn flake crumbs. (from the box) It wasn't dry at all. I can't figure out how some of the other people thought it was dry. Was it because they used 2% cheese? Anyway, I will make this again and again. Thank you so much for this recipe.

I made this recipe and it was very easy, however, I did not have any corn flakes or almonds, so I left them out. It was what I was looking for in the recipe. Just cauliflower and cheese. I added a few spices and came up with my own recipe. Thank you for your idea.

I made it for a picnic and nobody cared for it. It was dry and the flavors fought against each other, they did not go together.

Rated 5 out of 5 by from This was soooooooo good. This was soooooooo good. Me & my husband ate the whole thing. I used Ritz crackers and mild cheddar instead of what was called for tho. I wouldn't change a thing otherwise. I did not find the cauliflower rubbery from microwaving at all as someone else had commented. I will definately make this again.
