  • Heat oven to 375°F.
  • Cut large cauliflower florets in half. Combine vegetables in 2-qt. casserole sprayed with cooking spray.
  • Mix remaining ingredients; spoon over vegetables.
  • Bake 20 to 25 min. or until heated through.

Have fresh cauliflower on hand? Prepare recipe as directed, substituting 4 cups cooked fresh cauliflower florets for the frozen cauliflower.

Rated 3 out of 5 by from Ok for something different I didn't have a problem with the cauliflower being under cooked because I read the instructions and reviews FIRST. It says to drain and thaw the frozen cauliflower...not doing that could cause it to not be the texture you want....the author says you can use fresh cauliflower and that is what I did. Obviously 25 minutes in the oven would not be long enough to cook it so I first steamed it to crisp-tender. Then I completed the recipe. Like others I added a bit more ranch. My 3 star rating was because, while edible, it just wasn't a flavor I enjoyed and I don't think I would ever make it again. I love ranch but I just didn't like it in combination with cooked cauliflower.

I added extra dressing (based on previous comments) and thawed my cauliflower prior to baking. I also used regular cheese (not fond of low-fat) and overall my guests really enjoyed the dish. If you use fresh cauliflower, I would suggest cooking it all but soft prior to making the dish. The short baking time may not be enough to cook it soft.

I added a little garlic powder for flavor and some Ritz roasted vegetable cracker crumbs on top for texture. It was really good! I loved it, and I don't particularly like cauliflower.

This is the only vegetable that my 2 girls have repeatedly asked me to make again. It is no longer just a special occassion or holiday meal for us.
