  • Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 7 min., turning after 4 min.
  • Add broccoli, soup and VELVEETA; mix well. Simmer on medium heat 7 min. or until chicken is cooked through (165ºF).
  • Serve over rice.

Variation

Prepare using your favorite cream soup and frozen vegetable combination, such as mushroom soup and peas.

I didn't have reduced sodium cream of chicken soup, so I used a cream of mushroom soup; wished I had the reduced sodium soup though. I also sprinkled on some French Fried onions a couple minutes before serving. Served it on brown rice and it was pretty good! My husband also gave it 4 stars!

Rated 5 out of 5 by from We thought this was a wonderful recipe. We thought this was a wonderful recipe. The best part about it (besides being easy) was that is literally took 30 minutes from pan to plate...that is fantastic in my book. I thought it had great flavor, I did season the chicken breasts with Season All before placing in the frying pan and instead of serving on rice, I served it on chicken flavored stuffing. I have already passed this on to all my friends. Definately a keeper at our house.

Rated 5 out of 5 by from O wow! O wow! I loved this recipe and my boyfriend couldn't get enough of the sauce. I kind of altered the recipe however. I added onions and smashed whole pieces of garlic and browned the chicken in veg. oil. I then added in the cheese and soup with low sodium chicken broth. I also used dried parsley flakes, Greek seasoning and Italian seasoning. This was awesome and the sauce like I said "we couldn't get enough of it!"

Rated 4 out of 5 by from I was a little apprehensive about using velveeta... I was a little apprehensive about using velveeta... I saw this recipe using a less fattening velveeta, I decided to try it I always think of it as fattening and kinda gross. (sorry Kraft!) However, I made the low-fat version and the family loved it... 4YO and very picky 2YO had no problems eating up. I added some hot sauce and a bit of garlic... someone had called it "bland" and that's a bad word in our house. :)

I made this recipe last night. it was VERY easy to make but i pulled the chicken out of the skillet to make the cheesy sauce. it made it easier to stir. i also added some chicken stock to it to thin it out a lil to go a lil further. next time im making a double batch of the sauce. its hard to believe this one is low cal. its so yummo! everyone that was here lastnight LOVED it! i got told it was a keeper.

Rated 3 out of 5 by from This turned out pretty good but the recipe needs some tweaking. This turned out pretty good but the recipe needs some tweaking. The sauce is way too thick the way the recipe is in my opinion, and it has a bit to much cheese. I had to thin it out with milk, which made it a lot better. Also, it helps to take the chicken out of the pan until you have the sauce all mixed together and the cheese is melted then return the chicken back to the pan to simmer.

Rated 4 out of 5 by from Delicious. Delicious. Cooked chicken longer before adding the rest of the ingredients. I combined the soup, cheese and some chicken broth (low sodium soup and chicken broth and skim mozzarella cheese) and heated slowly before pouring over spinach and chicken in the skillet. Yes, substituted spinach for the broccoli. Added black cracked pepper and garlic powder. Do again.

Rated 2 out of 5 by from chicken took MUCH longer to cook than expected. chicken took MUCH longer to cook than expected. I probably cooked it for twice the amount of time it calls for before it wasn't pink anymore. and that was after the original cooking and then simmering. the finished product was yummy, but i'll need to adjust times and maybe cut the chicken into bite-sized pieces instead of leaving it in large pieces
