  • Place, seam-sides down, in 13x9-inch baking dish. Top with tomatoes and cheese. Cover with foil.

My Husband found this recipe in my recipe box and decided to surprise me with dinner one night. He thought that it looked easy enough for him who can barely make spaghetti dinner. Turned out so good that I immediately asked when he would cook dinner again. He was so pleased that it turned out so well since he didn't feel that he knew what he was doing. This recipe is now on my top 10 things to make! For picky eaters - use the blender to mix the ingredients - it makes it smooth and yummy!

This was a good recipie but I added my own variation because just plain cream of chicken sounded too bland. I used southwest nacho cream soup, and added red and green peppers n onions. Also, I added salsa instead of stewed tomatoes, and put it on right at the end with the cheese so it wouldn't get mushy. Oh and I added extra cheese inside so it was oooey goooey good! :D

But each time I make this, I try something different. Instead of cream of chicken, try chicken verde, or use plain chicken, and add a taco seasoning packet. I make this all the time because it's super easy and I can usually scrape up all the ingredients. Mix it up, and I bet you'll love it!

I did add some taco seasoning to the cheez & chicken mixture for an extra kick & it was great! Quick Tip for you busy moms out there, buy a store made rotisserie chicken from your deli, use half of chicken meat for this recipe and other half for another recipe, makes it cost efficient as well as easy!

Rated 5 out of 5 by from I altered this slightly to conform to my family's taste and they loved it! I altered this slightly to conform to my family's taste and they loved it!! Added garlic to the chicken. Heated the chicken and soup in a saute pan and added some cheese. Substituted salsa for the tomatoes and sprinkled a little tabasco over it. The dolop of sour cream added the final touch. I recommend it as a quick, easy, tasty meal!!

I usually bake it with the foil for most of the time and then take the foil off for the last couple of minutes. It make the corn tortillas just a little crip!! This is really easy and a great dinner. I have even used canned chicken to save time and it was still great!!

I added a lot of spice to the chicken which I highly recommend, because otherwise I think it would have been a little bland. Use your favorite spices but I recommend lots of chili powder, cayenne pepper, black pepper, and a little garlic and onion powder.

Rated 5 out of 5 by from I've made this for years with a slight difference. I've made this for years with a slight difference. I mix the soup, chicken, & cheese with green chilies. Then I layer the tortillas in the pan, spooning the mix between layers. After it's done cooking, I cut it in squares. As a Mom of 10, I don't have the time to make individual enchiladas.
