  • Heat oil in large nonstick skillet on medium heat. Add chicken; cook 6 to 7 min. on each side or until done (165°F). Remove chicken from skillet; cover to keep warm.
  • Add broth to skillet. Bring to boil.
  • Stir in rice, broccoli and VELVEETA. Top with chicken; cover. Cook on low heat 5 min. Remove chicken from skillet. Stir rice mixture until VELVEETA is completely melted and mixture is well blended.
  • Serve chicken with the rice mixture.

Serving Suggestion

Serve with a mixed green salad tossed with your favorite KRAFT Lite Dressing.

Keeping It Safe

The danger zone for holding food is between 40°F and 140°F. Once food is cooked to proper doneness and temperature, it can be kept hot at 140°F or above. Do not let food stand at room temperature longer than 2 hours. If the room temperature is above 90°F, do not let food stand longer than 1 hour. Make sure the refrigerator temperature is set at 40°F or lower. Reheat food to an internal temperature of 165°F to ensure food safety.

Substitute

Prepare using 1 pkg. (16 oz.) frozen broccoli florets.

Note

Increase oil to 2 Tbsp. if using a regular skillet.

Rated 4 out of 5 by from The best thing about this recipe is it's fast and easy. The best thing about this recipe is it's fast and easy. Make sure you season your chicken before cooking it otherwise it will be bland. I added 2 oz. more cheese and a little bit of bouillon powder to the chicken broth. I also used frozen broccoli florets that I thawed out. Which required very little chopping. Next time I want to try adding a can of cream of mushroom soup and see how well that works. This is similar to another recipe I've made for years "Broccoli and Chicken Casserole", but it's a bit more involved and of course more tasty. But when you need a fast and somewhat tasty meal this one is it.

I chopped the chicken up into bite size pieces and seasoned them with salt, pepper, garlic powder, parsley, and a little poultry seasoning. I also didn't add the cheese. It was excellent and my 4 years old son and myboyfriend(who doesn't like mushrooms) both devoured it. I plan oon adding this one to my regular recipes. Very fast and easy to make. I loved it!!! :D

Rated 4 out of 5 by from I loved this recipe. I loved this recipe. My husband loves cheese so I automatically added an additional ounce or so of cheese. I love one pot recipes and this one is perfect for our family, especially since I just had a baby and my time in the kitchen is limited. I think that to make this easier I will cook and chop the chicken into on inch pieces to make it even easier to eat.

The only things I did different were not using all of the brocolli and rice. I used about 1 1/2 cups of rice and half the brocolli (it seemed like too much). Next time I cook this meal I will also cook twice the amount of chicken because we had lots of rice left over. It tasted great though!

My husband and his best friends use to allow me to get a plate of food and then they would fight for the rest. We all really liked it and tonight my kids will try it for the first time, I'm sure they will love it like the rest of us.

He is such a picky eater and he enjoyed it the cooking and eating. I did add a can of cream of chicken to it since I decided to bake it. This will definitely be in my rotation of weekly meals.

It is a great meal when you don't have alot of time to cook. The best thing is my family loves it and I never have left -overs!!! Another great thing is you can add different veggies for a great taste!
