  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, cook and stir chicken in large nonstick skillet sprayed with cooking spray on medium heat 2 min. Stir in salsa, corn and peppers. Bring to boil. Simmer on medium-low heat 10 min. or until chicken is done, stirring occasionally.
  • Drain pasta. Add to chicken mixture; mix lightly. Top with cheese. Remove from heat; cover. Let stand 1 min. or until cheese is melted.

This dish is currently on low on my stovetop, letting the flavors meld a little more, and already is one of my favorites! The only change I made was in the sauce. I only had half a jar of salsa (a good black bean/corn one), but I was also in the mood to try making my own enchilada sauce for another recipe. I used the half jar of salsa, and I used the enchilada sauce for the rest of it. Really good flavor, and super easy especially if you're just using a jar of salsa!

Rated 5 out of 5 by from Excellent, and very flexible recipe. Excellent, and very flexible recipe. I did add a little extra taste the last time I cooked it. I lightly tossed the chicken pieces in some taco seasoning and kept them in the fridge for an hour and also used 2 cups of salsa. I also added chopped onion, peppers and a little broccoli to the simmer stage. I also added some Mexican style tomatoes. The 'heat. was perfect and leftovers were great. Definitely a "go to" recipe.

Rated 5 out of 5 by from Excellent! Excellent! I made this tonight (doubled recipe) and it was a hit, without a doubt. I have some fussy eaters but this was one dish I had NO complaints on :) (I did add 1/2 pk of spicy taco seasoning to the chicken while it was cooking, 8 oz of tomato sauce, 1 can of chili style tomatoes, and 1 onion.) Definitely on my rotation of quick, inexpensive meals. May try with hamburger instead of chicken next time. :)

Rated 5 out of 5 by from Delish! Delish! I Made it exactly the way it states in the recipe and everyone loved it! Next time I will make more. I doubled it for my family of 2 adults and 4 kids sine the baby is to small to eat table food. Kids asked for seconds AND wanted it for leftovers but we only had one serving leftover.....again, sooo delish. You could use canned rotel or tomatos with green chilis and experement with the cheese.

I used the organic salsa I had, added a handful of onions and some red peppers and ended up adding a small can of tomato sauce to thin it out a little. But the flavor was great, the salsa had some nice little kick! I also thought the meal was super easy to make and didn't have that "heavy" pasta feel. I will definitely make this again and again!

Rated 4 out of 5 by from I adapted this recipe to make more than the four servings as stated. I adapted this recipe to make more than the four servings as stated. I used a 13.25oz box of multi grain penne pasta. 1 1/2 cups of corn, added orange,green and yellow pepper strips, added a 24oz and a 16oz jar of salsa. I cooked the chicken in different spices to add a little more flavor. This makes a lot made this way, good for a family and hopefully leftovers! Will make again.

I made this becuase I wanted something good for you and easy; I definatley scored in both categories! Very easy and very tasty. I did do a stop light of peppers (red, yellow and green), but hubby and I loved it. Very good and very easy. Will definatley make again. Hubby says this is even in the "entertaining" category to be served for guests! (and he is super picky)

I also added some things to make it my own, such as a little bit of chili powder, taco bell taco seasoning a little bit of water and sizzled it all together. To top it off at the end when ready to serve you can crunch up some tortilla chips on top of the cheese!! Great and my family loved it. I would make this again.
