  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, cook and stir chicken in large nonstick skillet sprayed with cooking spray on medium heat 2 min. Stir in salsa, corn and peppers. Bring to boil. Simmer on medium-low heat 10 min. or until chicken is done, stirring occasionally.
  • Drain pasta. Add to chicken mixture; mix lightly. Top with cheese. Remove from heat; cover. Let stand 1 min. or until cheese is melted.

This dish is currently on low on my stovetop, letting the flavors meld a little more, and already is one of my favorites! The only change I made was in the sauce. I only had half a jar of salsa (a good black bean/corn one), but I was also in the mood to try making my own enchilada sauce for another recipe. I used the half jar of salsa, and I used the enchilada sauce for the rest of it. Really good flavor, and super easy especially if you're just using a jar of salsa!

Rated 5 out of 5 by from Excellent, and very flexible recipe. Excellent, and very flexible recipe. I did add a little extra taste the last time I cooked it. I lightly tossed the chicken pieces in some taco seasoning and kept them in the fridge for an hour and also used 2 cups of salsa. I also added chopped onion, peppers and a little broccoli to the simmer stage. I also added some Mexican style tomatoes. The 'heat. was perfect and leftovers were great. Definitely a "go to" recipe.

Rated 5 out of 5 by from Delish! Delish! I Made it exactly the way it states in the recipe and everyone loved it! Next time I will make more. I doubled it for my family of 2 adults and 4 kids sine the baby is to small to eat table food. Kids asked for seconds AND wanted it for leftovers but we only had one serving leftover.....again, sooo delish. You could use canned rotel or tomatos with green chilis and experement with the cheese.

Rated 5 out of 5 by from YUM! YUM! This recipe has all the best elements- quick, easy, flavorful AND low in fat! It's one of our family's favorites by far, and I love how quick I can put it together. Using frozen chopped bell peppers can save time, and I usually add a can of black beans, drained & rinsed, for extra protein & fiber. Make this today & you won't be sorry!

I read the reviews and made some modifications, of course! :) I used 1 cup of salsa (chunky picante sauce), 1/4 cup of taco sauce, and 1/4 cup of melted Velveeta cheese. It added the right amount of spicy and cheesy flavor! I also did without the pasta and it came out great on its own! Would love to try it over rice too!

Rated 5 out of 5 by from Quick and easy recipe. Quick and easy recipe. I doctored it up as well, adding sweet corn, red peppers and minced garlic. Since we're cheese lovers, I added Velveeta cheese to the sauce, along with the additional cheddar cheese on the top. My family rated this recipe a 10+. They said it deserves more than 5 stars, it's the best!

Next time I will add more and I didn't add the peppers. it turned out great, will def make it again!
