  • Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 6 to 7 min. on each side or until done (165ºF). Remove chicken from skillet; cover to keep warm.
  • Add broccoli, soup and VELVEETA to skillet; mix well. Cook on medium heat 7 min. or until VELVEETA is melted and sauce is heated through, stirring frequently.
  • Serve chicken and broccoli mixture over rice.

Variation

Prepare using your favorite cream soup and frozen vegetable combination, such as mushroom soup and peas.

    The recipe is a little bland to me. With some spices added in it would probably be much better and I will experiment with that in the future.

    i tweaked my recipe a little as i did not have velveeta on hand. i used cheddar cheese but had to add some milk to thin the soup/cheese. otherwise this is very good!
