  • Heat oil in large nonstick skillet on medium-high heat. Add chicken; cook 6 to 7 min. on each side or until done (165ºF). Remove chicken from skillet; cover to keep warm.
  • Add broccoli, soup and VELVEETA to skillet; mix well. Cook on medium heat 7 min. or until VELVEETA is melted and sauce is heated through, stirring frequently.
  • Serve chicken and broccoli mixture over rice.

Variation

Prepare using your favorite cream soup and frozen vegetable combination, such as mushroom soup and peas.

I did make a few alterations such as: add pepper & garlic to the chicken while it cooked AND use fresh broccoli-I cut it and boiled it on high for 1 min. b/f adding to the mix). It was great! Serve with fresh green salad and rolls to add a hearty feel. Everyone in the house loved it (2 kids & 4 adults). Another idea we had was to cut up the chicken instead of serving a whole breast so it would be great for the hubby's to take as leftovers the next day.

Rated 5 out of 5 by from YUMMY! YUMMY! This recipe was DELICIOUS! My whole family enjoyed it and almost everyone wanted seconds, including my toddlers. I changed some things though. I cut the chicken into chunks and seasoned with red pepper flakes, onion powder, and garlic powder. I also added more Velveeta Cheese and about 2/3 cups of milk. Since my family loves broccoli, I doubled the amount called for. This was so good and it will become a regular around here.

Rated 4 out of 5 by from I don't keep velvetta in the house so I used shredded cheddar. I don't keep velvetta in the house so I used shredded cheddar. I did add salt,pepper and garlic to chicken when cooking it. I also added some water when I added the soup like someone recommended. I did add some parsley along with the soup and cheese because I thought it still needed some taste. My 11 and 13 year olds liked it but said next time to add more than 2 cups brocolli because it was no where near enough.

Rated 4 out of 5 by from I really liked this dish but my husband just doesn't care for frozen broccoli anymore. I really liked this dish but my husband just doesn't care for frozen broccoli anymore. So next time I may use fresh broccoli or some other frozen vegi. With the leftover chicken, sauce & rice, I chopped up the chicken and put the sauce & rice with it. I plan to have it as a soup for lunch. Should be pretty good! I love the magazine. I always try one or two new recipes.

Rated 4 out of 5 by from I thought this recipe was great! I thought this recipe was great! I read it in my daughter's magazine and it sounded intriguing--she made it too and thought it was delicious. Chicken was tender and pretty juicy without being underdone. Also I served buttered noodles with it instead of rice. Good dish for a single person--I ate half of it tonight and will save the rest for another day.

This is a great recipie i cooked this about an hour ago for my kids, boyfriend and his mom, and my mom as well. Everyone enjoyed this very much. The cheese sauce is a little thick so what i did was added 1/3 cup of milk and i didn't have any rice so i used pasta instead and it worked out FANTASTIC! But i would definately recomend this recipie to everyone.

I didn't care for the Minute Rice (that was my fault for not substituting). The creamy cheese sauce lacked flavor and was very thick. I also had to add milk in order to make it a bit thinner and to drissle over the entree. Needless to say, I am not very anxious to try this recipe again.

Rated 4 out of 5 by from Good family meal. Good family meal. Both my 3 and 2 year olds finished their plates. My husband and I thought it was yummy too. I used cheddar cheese instead of the prepared cheese product and used 1/4 - 1/2 C of water (after adding the water I thought milk would probably work good too). I served over noodles with a green salad and garlic bread.
