  • Place potatoes in large saucepan. Add broth; bring to boil on medium heat. Cover; simmer on medium-low heat 15 min., stirring after 8 min. Uncover; simmer 5 to 6 min. or just until potatoes are tender and most of the broth is absorbed.
  • Add Neufchatel; mash potatoes on low heat just until Neufchatel is melted and mixture is well blended. Add sour cream and Parmesan; mash and stir until potato mixture is blended and heated through.

Rated 5 out of 5 by from Awesome. Awesome. I hate to cook and am looking for the perfect tasting recipe for common things so I can have just one. This is it for mashed potatoes! I did add a little more chicken broth to cook in and I didnt put in the full amount of sourcream. They were still the bomb! Going to try them with fat free sour cream and fat free cream cheese to see if its still just as good. OH, and I added black pepper. They were GREAT fried the next day btw!

I saw other comments about it being dry, so I added chicken broth to about 2/3 up the potatoes in the pot. When they were done cooking, I drained off the excess liquid, then added the cream cheese, etc. Perfect! I will definitely make again.

Other than that one change everything else was easy and they tasted great with the meatloaf I made for dinner.

I didn't measure anything and my potatoes were pretty liquidy so I skipped the sour cream. I just eyeballed the parmesan cheese and the cream cheese. It turned out great!

Rated 4 out of 5 by from I would rate it 4.5 stars. I would rate it 4.5 stars. The potatoes had a nice flavor, but was a tad dry. My potatoes were not completely done, so I would suggest cooking for longer than what the receipe says. I halved the receipe which would serve about 4 people.

These are really good I used regular potatoes instead of red and they were just as good. I also added garlic and onion powder to it. I added some milk to it also they are super thick, but real good.
