  • Heat oven to 375ºF.
  • Mix ground beef, cracker crumbs, eggs, onions, garlic, pepper and 1/4 cup barbecue sauce just until blended.
  • Place meat mixture into 11x8-1/2-inch rectangle on sheet of waxed pepper; top with cheese, ham and bacon, spreading ingredients to within 1-1/2 inches of edges. Roll up tightly, starting at one short side and pulling away waxed paper as meat is rolled. Place, seam side down, on foil-covered rimmed baking sheet.
  • Bake 48 to 50 min. or until done (160ºF), brushing with remaining barbecue sauce after 40 min. Remove from oven. Let stand 5 min. before slicing to serve.

Serving Suggestion

Serve with a mixed green salad and your favorite fresh fruit to round out the meal.


Substitute thinly sliced capicola for the ham.

Special Extra

Prepare meatloaf as directed; cool, then slice. Wrap individual portions in foil. Label, date and place in freezer-weight resealable plastic bags. When ready to serve, unwrap and microwave until heated through (160°F).
