Cheesy Eggplant Casserole

Cheesy with shredded mozzarella and grated Parmesan, this yummy eggplant casserole is easy to make and ready in less than half an hour.

What You Need

small  eggplant (8 oz.), cut into 1/4-inch-thick slices
cup  marinara sauce
cup  KRAFT 2% Milk Shredded Mozzarella Cheese
Tbsp.  KRAFT Grated Parmesan Cheese

Make It

HEAT oven to 375°F.

LAYER half the eggplant, sauce and cheeses in 8-inch square baking dish sprayed with cooking spray; repeat layers.

BAKE 25 min. or until eggplant is tender.

Special Extra
Add layer of 1 cup cooked sliced mushrooms over the first eggplant layer. Garnish with fresh basil leaves or parsley sprigs before serving.
