Substitute 2 cups shredded cooked chicken for the cooked ground beef.
Substitute 3 cups chopped cooked vegetables, such as green or red peppers, onions, eggplant or zucchini, for the cooked meat. Also, if you are using canned refried beans and packaged tortillas, check to make sure they are vegetarian varieties.
