  • Cut 4-inch length from green end of 1 onion; slice remaining onions. Beat cream cheese and 1-1/4 cups cheddar with mixer until blended. Stir in sliced onions and peppers. Refrigerate 1 hour.
  • Shape into ball; roll in remaining cheddar. Cut pepperoni into shapes for the jack-o'-lantern's eyes, nose and mouth; press into cheese ball to make face. Insert green onion piece into top for stem.
  • Serve with crackers.

Variation

Prepare using PHILADELPHIA Neufchatel Cheese and KRAFT 2% Milk Shredded Cheddar Cheese.

I took other reviewers suggestions and used half garden veggie cream cheese and I added about a Tbsp of ranch dip mix. If I hadn't, I think it would be very bland. Also took other reviewers suggestions and tried to put the face on first (I just used red peppers) but as I put the cheese on it and tried to perfect the shape, the face just kinda got smashed, so I took it off. Also, use the stem from the red pepper instead of the green onion pieces.

I really should've put the "face pieces" on before the cheddar cheese b/c I couldn't get the pepperoni to stick after I rolled the ball in the cheese, but it was just as cute without the face. Huge hit with all of our guests, ranging in age from 3-50. The kids didn't want to eat anything else, just "the big cheese pumpkin"!!

I took the suggestions from other reviews, replacing one pkg of cream cheese with the garden vegetable. I also omitted the green onions and red pepper in favor of chopped black olives, chopped pepperoni and 1/3 pkg of dry ranch dressing. Scrumptious!

Instead of using the green onions and peppers, I used one container of chive and onion spreadable cream cheese and one package of regular. I also used a celery stick with leaves on it for the stem and turkey pepporoni for the face. This will be one of my new favorite party dips.

Also it was easier to use my hands to mix the cheese and fold in peppers and onions. Had a little bit of a hard time getting the pepperoni face to stick tho. I will definatley make again!
