  • Brown meat in large skillet; drain.
  • Add salsa and water; stir. Bring to boil. Stir in macaroni. Reduce heat to medium-low; cover. Simmer 15 minutes or until macaroni is tender.
  • Add corn and 1 cup of the cheese; cook until cheese is melted and mixture is heated through, stirring occasionally. Sprinkle with remaining 1/4 cup cheese; cover. Let stand 1 minute or until cheese is melted.

I added taco seasoning to the beef after browning, then added all the ingredients. I would also recommend cooking the pasta in boiling water while the meat is browning..it makes it a lot quicker in the end. I also used Mild Cheddar instead of Sharp and it turned out very well, I may try the Taco Cheese in the future. A dollop of sour cream on top makes this great! I served it with cornbread and it was a hit!

Usually I get a luke-warm shoulder shrug of approval for new dishes, but he actually asked for this one again. I made some slight modifications: 20oz salsa instead of 16 2 cups of water instead of 1.5 This helped cook the pasta better. The pasta was not completely covered by liquid when I used the original recipe, so it didn't cook all the way.

The next time I made it I used rotel instead of salsa, velveeta cheese instead of sharp cheddar and it was absolutely perfect. This recipe is great because you can make the change that you and your family will like.

I had to add more salsa and seasoning to this because it was so bland. Usually the recipes from the website are great but this one REALLY needs a workover to be anywhere near good.

Not bad, I used a little more water and simmered it longer b/c my family only likes their pasta noodles very tender. Other then that I did everything the same and it went over well. Love the fact in only uses one skillet. Easy cleanup!!!!

Rated 3 out of 5 by from I thought this was 'okay'. I thought this was 'okay'. It is similar to goulash, which I don't care for, but my husband LOVED this and so did my 4 year old. I added half the amount of corn. I think it would taste better without the corn and with hotter salsa.

I added 1 pkg. taco seasoning mix, mexi corn, and Rotel. We served it over Fritos with lettuce, tomato, and sour cream. Yummy
