Cooking Know-How

Before cooking, the quinoa should be rinsed to remove the bitter resin-like powdery coating, called saponin. Saponin forms soapy-looking "suds" when the seeds are rinsed in water.

    The prep time includes measuring and mincing. The minced garlic goes in the cooking water with the quinoa. Most quinoa is ready in 15 -20 minutes, so the recipe shouldn't take that long if the quinoa is already rinsed. I made a version of this with Swiss cheese and powdered garlic. I needed some idea of what to put in quinoa to make it taste like something intentional. It was good.

    This recipe is a mess! It says it takes five minutes but calls for uncooked quinoa and I guess you just throw raw minced garlic in?
