Before cooking, the quinoa should be rinsed to remove the bitter resin-like powdery coating, called saponin. Saponin forms soapy-looking "suds" when the seeds are rinsed in water.
In South America, when saponin is removed from the quinoa, it is used as a laundry detergent or as an antiseptic for skin injuries.
