Looking for a way to get quinoa on the menu? This crowd-pleasing casserole will do the trick. Bonus: It's also got potatoes, ham and cheddar cheese!

What You Need

large  potato (10 oz.), peeled, thinly sliced
medium  onion, chopped
medium  red pepper, chopped
medium  green pepper, chopped
cup  KRAFT Zesty Italian Dressing
can   (5 oz.) evaporated milk
tsp.  dried thyme leaves
cups   cooked quinoa
pkg.   (6 oz) OSCAR MAYER Smoked Ham, chopped
pkg.  (8 oz.) KRAFT Shredded Cheddar Cheese

Make It

PREHEAT oven to 375°F. Bring 2 qt. water to boil in medium saucepan on high heat. Add potatoes. Reduce heat to medium-low; simmer 5 min. Drain; rinse potatoes with cold water. Drain; set aside. Cook onions and peppers in dressing in medium skillet on medium-high heat 10 min. or until vegetables are crisp-tender; set aside. Beat eggs, milk and thyme in large bowl with wire whisk until well blended.

LAYER half of the potatoes in bottom of 2-qt. casserole dish sprayed with cooking spray. Top with half each of the quinoa, ham, cheese, vegetable mixture and egg mixture. Repeat layers; cover with aluminum foil.

BAKE 45 min. or until potatoes are tender. Let stand 5 min. before serving.

Quinoa was a staple grain of the ancient Incas. Quinoa is a complete protein, containing all of the essential amino acids. It should be rinsed thoroughly before cooking to remove any powdery residue of saponin, the bitter, resinous coating that protects its seeds. To cook quinoa, combine 2 cups water and 2/3 cup quinoa in medium saucepan. Bring to boil. Reduce heat to low; cover and simmer 10 min. or until the grains are translucent and the germ ring is visible on each grain. Makes about 2 cups.
