  • Heat dressing in small saucepan on medium heat. Add onions; cook and stir 3 min. or until tender.
  • Stir in rice, broth and tomatoes. Bring to boil. Reduce heat to low; simmer 3 min.
  • Add cheeses and parsley; stir until blended. Remove from heat. Let stand, covered, 5 min. before serving.

Substitute

Substitute 1/2 cup frozen peas for the tomato.

Rated 3 out of 5 by from I made this recipe with the tomatoes. I made this recipe with the tomatoes. Next time I will use the variation suggestion and make it with peas. I did not like the tomatoes, but the cheese rice taste excellent. I don't keep minute rice on hand, so I made the rice in my rice cooker with the bouillion cube sprinkled over the rice, then added the cheese when the rice was done cooking. I will make this again.

Rated 3 out of 5 by from I wasn't blown away by the recipe but it's a good option to have on hand. I wasn't blown away by the recipe but it's a good option to have on hand. I added a little basil to it this time and since it was served with chicken and corn, both could be mixed in to add some variety to this recipe. It can be a little dry so I added more broth than was called for. I'll make it again when we are tired of other rice recipes.

I change the ingredients slightly because I was out of both Minute Rice and fresh plum tomatoes so I used leftover rice, canned tomatoes and put both shredded parmesan and romano cheese. My family eats rice four out of seven days and they loved this dish.

Common ingredients, easy to make, quick. Had a nice taste. I'd even make a double batch next time, seems like it would be good leftover too.

Boyfried said it was excellent. A nice change and usually alwasy have ingredients on hand. Will defianately make again.

Rated 5 out of 5 by from Fast and easy recipe. Fast and easy recipe. Used vegetable broth instead of chicken broth and substituted a can of diced tomatoes with balsamic vinegar, basil and olive oil for the plum tomato. My one year old even liked it! Will definitely make again.

I made this recipe using a can of diced tomatos and green peppers instead of a plum tomato and it was amazing. I served it with chicken breast cooked in Kraft Italian dressing and it all turned out great. Will make it again for sure.

Rated 5 out of 5 by from It was great. It was great. I had cooked rice in my fridge so I just cook the onions in the dressing and broth and I added my rice and follow the recipe, it was a hit!!! I love rice and this is now one of my favorites, mmmm cheesy and creamy!!
