  • Stir in rice, broth and tomatoes. Bring to boil. Reduce heat to low; simmer 3 min.
  • Add cheeses and parsley; stir until blended. Remove from heat. Let stand, covered, 5 min. before serving.

Substitute

Substitute 1/2 cup frozen peas for the tomato.

    This is one of my favorite recipes - its so delicious! Its more of a creamy tasting rice than cheesy, but it is definitely worth trying. I have made it with and without the parmesan cheese and it has always come out great.

    Made this with spinach and cheese stuffed chicken and it was a great compliment to the dish. Even my 2y/o picky eater loved this rice. No leftovers though, so next time I may double the recipe because it was so good.
