Cheesy Rice 'n Tomatoes

This simple rice dish doesn't require any fussy methods or fancy ingredients, but the result tastes like the creamiest Italian restaurant risotto. You will love it.

What You Need

Tbsp. KRAFT Zesty Italian Dressing

Tbsp. chopped onions

cup instant white rice, uncooked

1-1/4

cups fat-free reduced-sodium chicken broth

plum tomato, chopped

oz. (1/8 of 8-oz. pkg.) PHILADELPHIA Cream Cheese

Tbsp. KRAFT Shredded Parmesan Cheese

Tbsp. chopped fresh parsley

Make It

HEAT dressing in small saucepan on medium heat. Add onions; cook and stir 3 min. or until tender.

STIR in rice, broth and tomatoes. Bring to boil. Reduce heat to low; simmer 3 min.

ADD cheeses and parsley; stir until blended. Remove from heat. Let stand, covered, 5 min. before serving.

Substitute 1/2 cup frozen peas for the tomato.

This is one of my favorite recipes - its so delicious! Its more of a creamy tasting rice than cheesy, but it is definitely worth trying. I have made it with and without the parmesan cheese and it has always come out great.

Made this with spinach and cheese stuffed chicken and it was a great compliment to the dish. Even my 2y/o picky eater loved this rice. No leftovers though, so next time I may double the recipe because it was so good.

I made this recipe using a can of diced tomatos and green peppers instead of a plum tomato and it was amazing. I served it with chicken breast cooked in Kraft Italian dressing and it all turned out great. Will make it again for sure.

I loved this recipe because I was able to cook the rice the way it's supposed to be cooked. I seem to make rice too wet, not this time! It's fool proof! :)

I wasn't blown away by the recipe but it's a good option to have on hand. I added a little basil to it this time and since it was served with chicken and corn, both could be mixed in to add some variety to this recipe. It can be a little dry so I added more broth than was called for. I'll make it again when we are tired of other rice recipes.

i made the rice the first time but had no plum tomatoes so i substituted diced tomatoes with green chiles. it turned out wonderful. had a lot of flavor and every one enjoyed it.
