What You Need

Tbsp. PHILADELPHIA Cream Cheese, softened

cup KRAFT Shredded Cheddar Cheese

cup cooked instant white rice

cup frozen chopped broccoli, thawed

small boneless skinless chicken breast halves (2 lb.), pounded to 1/4-inch thickness

cup KRAFT Classic Ranch Dressing

Make It

PREHEAT oven to 350°F. Mix cheeses, rice and broccoli until well blended; set aside.

PLACE chicken breasts, top-sides down, on large cutting board; spread evenly with rice mixture. Starting at one of the short ends, tightly roll up each chicken breast; place, seam-side down, in 13x9-inch baking dish. Drizzle evenly with dressing.

BAKE 35 to 40 min. or until chicken is cooked through (170°F).

Cooking Know-How

Place 2 chicken breasts in large freezer-weight resealable plastic bag. Pound chicken with the side of a heavy can, rolling pin or meat mallet until chicken is 1/4-inch thick. Remove chicken from bag; set aside. Repeat with remaining chicken breasts.

I love this recipe! I just made it tonight for my picky eater' s. The great thing about this is you can use whatever ingredient you have on hand. Instead of the broccoli, I used fresh peas. I also used chicken rice, sauteed shallots that I added in and then topped with the ranch dressing and some extra cheddar cheese on top. like another reviewer said, don't over cook the chicken. because I sliced my breast very thin, it only took 28 minutes. I did use a little more cream cheese and added extra spices to the mixture and then seasoned the chicken. Very good and everyone is impressed when it's a stuffed chicken!

I would make this again, but I would add more seasoning to the inside of the chicken. Even a little salt and pepper would help. Maybe ranch mixed in with the stuffing?

The first time I had this was Valentine's Day of '07. My husband made it for me with his own hands and it was great! Unfortunately, he lost the recipe for two years. Magically, I stumbled upon it on kraftfoods.com (which, of course, is where he originally got it, but forgot). I was happy, so happy in fact, that we had it again that night. We will definitely have this again in the future! Very tasty!

This was a very delicious recipe although I did change a few ingredients to what I had on hand. I used smoke gouda cheese, and boiled fresh broccoli in chicken broth made from chicken bouillon cubes and I made rice pilaf from a homemade style recipe. I omitted the cream cheese and just spooned ranch dressing over chicken and than added broccoli and rice than sprinkled smoked gouda cheese and rolled the chicken breast up and than I spread more ranch dressing over top of roll and alittle olive oil and than baked in oven for 50 minutes. It was fantastic and I will be making this again. Thanks for sharing the recipe!!
