  • Mix sour cream and 2 Tbsp. Parmesan until blended. Refrigerate until ready to use.
  • Combine oil, garlic, paprika and red pepper; toss with potatoes in large bowl. Spread onto rimmed baking sheet sprayed with cooking spray.
  • Bake 12 min., stirring after 6 min. Meanwhile, combine shredded cheese, crushed croutons and remaining Parmesan.
  • Sprinkle cheese mixture over potatoes; bake 3 min. or until shredded cheese is melted. Serve topped with sour cream mixture.
