  • Preheat oven to 400°F. Mix all ingredients until well blended.
  • Shape into loaf in 9x5-inch loaf pan.
  • Bake 1 hour or until center is no longer pink. Remove from oven. Let stand 3 minutes before removing from pan. Cut into slices to serve.

Cook meatloaf until meat thermometer inserted into center of loaf registers 160°F and meatloaf is no longer pink in center.

I absolutely HATE meatloaf but my husband loves it, so I've been experimenting and looking for one that I can stomach. I tried this recipe, and it was a major hit. I actually LOVED it. My picky 2 year old even cleaned his plate and asked for "More please." It was extremely quick to prepare, and I love how I could just pop it in the oven and get other things done around the house. We'll definately be making this one a couple times a month.

Meatloaf is normally a once a year commodity at our house, with my husband taking a "no thank you" helping and the rest being fed to the disposal. I made a double recipe of this meatloaf and my family went surprisingly crazy over it. By the time the last kid got home from school there was only one piece left for him! Very moist and great taste. Will try the lower fat recipe next!

Rated 5 out of 5 by from This was delicious! This was delicious! I didn't have plain bread crumbs so I substituted using Italian flavored ones. I also used 1 and a half pounds of ground beef instead of 2 (it was all I had). Last but not least, I followed another reviewers advice and topped it with cheese and salsa for the last 5 minutes. My husband and 1 year old and I loved it!

Used Italian brd. crmbs. and added chpd. onion and chpd. poblano pep. cause I needed to use it up. Put add. salsa on top with 10 mins. left. Absolutely awesome! I hope the smell never leaves my house

I also added some salt and pepper, and tabasco as a previous reviewer suggested. So easy and quick to get in the oven. Delicious. If you are watching carbs, just use some oatmeal and 99% fat Free Turkey and it's really healthy.

I think next time I make it I might add some diced onions to the mix just to give it more flavor. Other than that I think it is a great recipe and very easy to make.

Everyone loved it and the left overs were great the next day for lunch. Also, added a bit more cheese which added more flavor.

Though, both my husband and my toddler loved the dish! I didn't have any fresh garlic - that probably would have helped to make it not so bland.
