  • Heat oven to 400ºF.
  • Mix first 4 ingredients with 1 cup cheese and 1/2 cup salsa.
  • Press into 12 muffin cups sprayed with cooking spray. Use back of spoon to make indentation in center of each. Place muffin pan on foil-covered baking sheet.
  • Bake 20 to 25 min. or until meatloaves are done (160°F). Top with remaining salsa and cheese; bake 3 min. or until cheese is melted.

Serve with a mixed green salad and slice of whole wheat bread to round out the meal.

Rated 5 out of 5 by from I love these! I love these! I have made them a few times and I actually have another batch in the oven as I write this! I'm sure the recipe would be great as it, but as many cooks would do, I have "personalized" it a bit. I put the entire salsa amount into the meat mixture and then when it's done baking I top it with bbq sauce and the extra cheese. Then stick it back in to melt the cheese. No matter how you cook it, this is a great easy recipe! My whole family loves it, from my 3 year old up to my husband (and his brother and mother and our best friends and their kids!) I've never had anyone not like this!

Rated 5 out of 5 by from Review: This recipe was really very good. Review: This recipe was really very good. My family loved it including the picky eater known as my 9 year old! It was greasy though after cooking so I took the loaves out of the muffin tin and set them on a plate, emptied the grease out of the tin and put the loaves back in for the last step of cooking. You definatley will want to use leaner ground beef for this recipe. I still gave it five stars for ease of making and awesome flavor!

Rated 1 out of 5 by from Yuck! Yuck! Kraft recipes are usually no-fail for my whole family, but we couldn't take two bites of this. I substituted ground turkey for the beef (which I do in all other recipes calling for beef), and made it as-directed otherwise. I can't begin to imagine the amount of grease these meat muffins would have been sitting in had I used the beef. All my future meatloaves will be prepared in my meatloaf loaf pan, which has a bottom pan that collects the grease. Not sure why this recipe has such great reviews???

This recipe was featured in a Kraft Foods magazine a few years ago, but it had variations on how to make it. One version I tried was use 1 box of Stove Top (don't prepare seperate just pour in dry mix), 1 cup of water, 1 tsp. Garlic Powder, and 1 lb. hamburger meat and mix it all up. Put in muffin pan, make an indention w/spoon and add bbq sauce. Bake @ 375 degrees 30 mins. Sprinkle Cheese on top & bake 10 more minutes. DELICIOUS!!

Rated 5 out of 5 by from My family loves this recipe. My family loves this recipe. I hate meatloaf, but I love this one! I was really nervous about the salsa, but oh my it is what makes it so delicious! My husband couldnt stop telling people about my amazing meatloaf lol. I recommend serving it with baked potatoes and a veggie! Yum! We have made this quite a few times now and it freezes well for future meals, just add the salsa and cheese after heating your mini loafs and your done!

I wanted to have something already fixed for when my boys get home from school or a ball game that wasn't junk. I thought this would be be great because of the portion size. Along with the mini meatloaf they had a small portion of veggies or a small salad to tie them over until supper. Wrong answer!! One wasn't enough. Needless to say I didn't have to fix supper. Next time I'll hide the others. 5 star for sure!! Marie

Rated 5 out of 5 by from This is my first time makein meatloaf in a muffin tin. This is my first time makein meatloaf in a muffin tin. I LOVED it. I will make all my meatloaf this way. Perfect portions and you can make different kinds to suit your families taste. I used Rits crackers (that is what i had on hand) and i topped half with ketchup as my 3 and 6 year old don't do spicy. They all came out GREAT. Moist and tasty, the cheese on top makes it even better.

I too made this recipe a couple years ago when it was featured with the variations as another person said and it was a hit!!! My whole family loved it!! When I make these I always plan on having pasta later in the week and I use the leftover meatloaves as oversized meatballs. I havent made this in a while but I am going to dig up my old magazine and start making them again!!!
