  • Heat oven to 400ºF.
  • Mix first 4 ingredients with 1 cup cheese and 1/2 cup salsa.
  • Press into 12 muffin cups sprayed with cooking spray. Use back of spoon to make indentation in center of each. Place muffin pan on foil-covered baking sheet.
  • Bake 20 to 25 min. or until meatloaves are done (160°F). Top with remaining salsa and cheese; bake 3 min. or until cheese is melted.

Serve with a mixed green salad and slice of whole wheat bread to round out the meal.

Rated 5 out of 5 by from Review: This recipe was really very good. Review: This recipe was really very good. My family loved it including the picky eater known as my 9 year old! It was greasy though after cooking so I took the loaves out of the muffin tin and set them on a plate, emptied the grease out of the tin and put the loaves back in for the last step of cooking. You definatley will want to use leaner ground beef for this recipe. I still gave it five stars for ease of making and awesome flavor!

I used ground sirloin and I did find it a little greasy so I took out the mini loaves and put them in a baking dish when I added the salsa and cheese for the last 3 minutes. They didn't seem as greasy when I took them out of the oven. We all loved these and my husband went back for seconds which is a rarity now that he is a senior citizen. :)

Rated 5 out of 5 by from not a meatloaf fan, but these are great! not a meatloaf fan, but these are great!! use extra lean ground turkey so there's no grease. i cut pieces of foil to fit inside the muffin tin then spray that. no sticking. add green pepper. usually serve with mashed potatoes......!! have made many times, and passed on recipe to others.

Rated 5 out of 5 by from Love these, I make them all the time. Love these, I make them all the time. They are easy to make and perfect for school lunches or as an after school snack. My husband takes some to work for lunch too. The only thing I change up is that I substitute the onion with pico de gallo; it gives it a bit more flavor I think.

Though I often tinker with recipes, I didn't feel this one needed it and made it exactly as written. Very good - and that's coming from someone who isn't a particularly big meatloaf fan usually.

Rated 5 out of 5 by from This is a huge favorite with my family...so easy and tasty. This is a huge favorite with my family...so easy and tasty. I do add minced garlic and a bit of cumin. A big hit served with red skin potatoes whipped with Monterey jack cheese and a red pepper, corn and black bean salad. Leftovers don't last long!

My son loved this dish---I'll definitely be making this again!! I even posted this on my Facebook page & 2 co-workers are waiting for my left-overs...(there are none).

I have made this twice now, my family loves it, I have used mild salsa and a mixture of mild and medium. I did not have any crackers so I used instant oatmeal, they did not know the difference. It does take longer to bake then it says.
