This was really good. My Daughter no longer eats meat, so I had to eliminate the bacon. I would make this again. Yum!
12 servings with 2 # of potatoes? c'mon ... this is more like a 6-8 serving recipe. I know you want to keep the nutritionals "healthy" but no one is having a 1/2 C of potatoes.
Also, with spinach, swiss would be much better than cheddar - also add a pinch of nutmeg as it goes so well with spinach.
