Look for firm, smooth, well-shaped potatoes that are free of wrinkles, cracks and blemishes. Avoid any with green-tinged skins or sprouting "eyes" or buds.
Prepare as directed. Bake 1 hour. Remove from oven, stir in 2 cups thawed frozen peas. Continue as directed.
When thinly slicing a large amount of potatoes, use a food processor or manual slicer (mandoline) for even results. Place the sliced potatoes into a bowl of cold water until ready to cook to prevent them from darkening.
