My children wanted the taste of a macaroni & cheese Dinner and didn't enjoy the recipe, but my husband and I enjoyed the new flavor the corn and tomatoes added to the cheese. It's great to have a new recipe that I usually have all the ingredients on hand for. Instead of fresh tomatoes, I opened a can of diced tomatoes and scooped out the 3/4 cup need for the recipe.

He is a purest when it comes to the "Blue Box" but he really liked the kick of the corn and tomatoes. I had some salsa lying around in the fridge begging to be used so I added in 4 tbsp of salsa. I also chopped up an avocado and mixed it in there. Even better the next day heated up in the microwave at work.
