  • Melt margarine in medium saucepan on medium heat. Add onions; cook and stir until tender.
  • Add remaining ingredients; cook on low heat until VELVEETA is melted and soup is heated through, stirring occasionally.

Substitute

Prepare as directed, substituting frozen chopped broccoli for the spinach.

Use Your Microwave

Microwave onions and margarine in medium microwavable bowl on HIGH 30 sec. to 1 min. or until onions are tender. Stir in remaining ingredients. Microwave 6 to 8 min. or until VELVEETA is completely melted and soup is heated through, stirring every 3 min.

My only change is 2% Velveeta and 1% milk. I have even made it with an 1/2 can of black bean(drained and rinsed)and 2 tablespoons of salsa! Next I am trying it with cooked cubed potatoes and cooked lean ground beef. Love it!

I also used shredded mozz. cheese and a little colby jack cheese instead of Velveta. I also added 1/2 cup of cream. I blended with electric hand mixer at end. Taste great. Very fast and easy!!

Because of all the others' comments about it being bland, I put in 1 cup of chicken stock & 1 cup of milk instead of the 2 cups of milk. It was very yummy. And the milk, chicken stock, and cheese makes a good base for other ingredients.

Rated 4 out of 5 by from Good Soup. Good Soup. I doubled the recipe using regular Velveeta (couldn't find the light) and it wasn't too rich. I added extra spinach too. I would more salt and pepper than called for but other than that is was very good.
