  • Heat oven to 350ºF.
  • Melt butter in large skillet on medium heat. Add celery; cook and stir 5 min. or until crisp-tender. Stir in water. Bring to boil. Remove from heat. Stir in stuffing mix, cranberries and nuts. Add 1 cup cheese and egg; mix lightly.
  • Spoon into 8 muffin pan cups sprayed with cooking spray, mounding stuffing mixture as necessary to fill cups. Sprinkle with remaining cheese.
  • Bake 10 min. or until stuffing cups are heated through and cheese is melted.

Perfect to serve during the holidays, this delicious side has built-in portion control.

Variation

Don't have a muffin pan? Spoon stuffing mixture into 8 muffin pan liners instead. Place on baking sheet and bake as directed.

Special Extra

Add 1 cup sliced fresh mushrooms to melted butter in skillet along with the celery.

Last time I added mushrooms, this time I added pumpkin seeds, mushrooms,a half of a can of whole cranberry sauce, and some left over turkey. It's great for lunch. I even made up some in the tiny tart pans for appetizers.
