  • Heat oven to 350ºF.
  • Melt butter in large skillet on medium heat. Add celery; cook and stir 5 min. or until crisp-tender. Stir in water. Bring to boil. Remove from heat. Stir in stuffing mix, cranberries and nuts. Add 1 cup cheese and egg; mix lightly.
  • Spoon into 8 muffin pan cups sprayed with cooking spray, mounding stuffing mixture as necessary to fill cups. Sprinkle with remaining cheese.
  • Bake 10 min. or until stuffing cups are heated through and cheese is melted.

Perfect to serve during the holidays, this delicious side has built-in portion control.

Variation

Don't have a muffin pan? Spoon stuffing mixture into 8 muffin pan liners instead. Place on baking sheet and bake as directed.

Special Extra

Add 1 cup sliced fresh mushrooms to melted butter in skillet along with the celery.

Last time I added mushrooms, this time I added pumpkin seeds, mushrooms,a half of a can of whole cranberry sauce, and some left over turkey. It's great for lunch. I even made up some in the tiny tart pans for appetizers.

Instead of dried cranberries, I used a few spoonfuls of Orange Cranberry Sauce I made with fresh cranberries. The sweet, cheesy taste was a huge hit with all. I served them in a cupcake tree and it looked very festive. Be sure to time it so its served hot.

I've made many varieties of stuffing over the years and this will be on my Thanksgiving table this year. I added extra celery, water chestnuts, and used pecans instead of walnuts. We made this recipe for my husband's work party, and it was the best stuffing I ever had! Instead of using the muffin tins, we just used a regular casserole, and it worked fine. We are making it again for a family Christmas party. It is so good!

I made homemade stuffing which was hardly touched. This will be one of my repeats. I love the idea of the individual servings. Very good re-heater too!
