Cheesy Wild Rice Soup Makeover

Turkey bacon and cubes of creamy VELVEETA make this better-for-you wild rice soup smoky, cheesy and, ultimately, delicious!

8 servings, about 1 cup each

What You Need

slices  OSCAR MAYER Turkey Bacon, chopped
 onion, chopped
qt.  (4 cups) fat-free milk
lb.  (8 oz.) 2% Milk VELVEETA®, cut into 1/2-inch cubes
can  (10-3/4 oz.) condensed cream of potato soup
can  (12 oz.) fat-free evaporated milk
cups  cooked wild rice

Make It

COOK and stir bacon in large saucepan on medium heat until done. Remove from pan; set aside. Add onions to pan; cook 5 to 6 min. or until crisp-tender, stirring frequently.

ADD all remaining ingredients except bacon to saucepan; stir. Bring to boil on high heat, stirring occasionally; simmer on medium-low 12 min. or until VELVEETA is melted and soup is heated through, stirring frequently.

SERVE topped with bacon.

Makeover - How We Did It
Here's a better-for-you alternative that will save you 190 calories and 22g of fat, including 13.5g of sat fat, per serving when compared with the traditional recipe. We did this by using 2% Milk VELVEETA, and fat-free milk and evaporated milk instead of half-and-half. We also substituted a decreased amount of turkey bacon for the regular bacon.
