  • Preheat oven to 400°F. Mix coating mix and peel in shaker bag or on plate. Coat chicken as directed on package. Arrange in single layer in shallow baking pan.
  • Bake 40 to 45 minutes or until chicken is cooked through. Meanwhile, peel bananas; cut in half lengthwise. Dip in orange juice, then roll in brown sugar until evenly coated on all sides.
  • Reduce oven temperature to 350°F. Place bananas around chicken. Bake an additional 10 minutes. Sprinkle with coconut.

Serving Suggestion

Serve with a crisp green vegetable, such as broccoli, and a glass of fat-free milk.

Selecting & Storing Bananas

Look for bananas that are firm and free of bruises. The number of brown spots on the peel indicates the ripeness - the browner the banana, the riper it is. Store bananas at room temperature. Very ripe bananas can be stored for a few days in the refrigerator. While the peel will darken upon refrigeration, the flesh will not be affected.

How to Check Chicken For Doneness

Always use a thermometer to see if chicken is cooked through. The internal temperature should register at least 165ºF. When the chicken is completely cooked, the juices should run clear.

I also added coconut to the coating for the chicken, instead of water to moisten the chicken I used orange juice. Another way to enhance the flavor as well is to marinate the chicken for about 20 mins in orange juice, it really helps to enhance the citrus flavor. After you coat the chicken and put it in the pan you can use a spoon and dribble more of the juice onto the chicken.
