  • Meanwhile, cook mayo, milk and basil in small saucepan on medium heat 2 min. or until slightly thickened and heated through, stirring occasionally.
  • Top chicken with sauce; sprinkle with tomatoes and onions.

I substituted the chicken with chicken breasts that I made on the grill (coated with lemon juice and parmesan)and used fresh basil and the whole family thought that this was a hit. It was so quick to make too.

This is very good and simple to make, except I had to double the amount of ingredients for the sauce to have enough for this amount of rice. Would definitely have this dish again!
