Green eggs and ham get all the press, but black beans and ham are just as flavorful (and don't require food coloring). Try them in this easy chicken dish.

What You Need

1/4
cup  KRAFT Zesty Italian Dressing
1
 broiler-fryer chicken (3 lb.), cut up
1
 onion, chopped
1
pkg.  (6 oz.) OSCAR MAYER Honey Ham, chopped
2
cans  (15 oz. each) black beans, rinsed
1
can  (14 oz.) stewed tomatoes, undrained
1
 jalapeño pepper, seeded, chopped
3
cups  hot cooked long-grain white rice

Make It

HEAT dressing in Dutch oven or large deep skillet on medium-high heat. Add chicken; cook 10 min. or until evenly browned, turning after 5 min. Remove chicken from pan, reserving drippings in pan; set chicken aside.

ADD onions and ham to pan; cook 5 min. or until onions are crisp-tender, stirring frequently. Stir in beans, tomatoes and peppers; top with chicken.

BRING to boil; cover. Simmer on low heat 20 min. or until chicken is done (165ºF). Serve over rice.

Kraft Kitchens Tips

Variation
Prepare using 6 small boneless skinless chicken breasts (1-1/2 lb.) and reducing the final simmering time to 10 to 15 min. or until chicken is done.
Note
If you don't have a lid for the pan, cover pan with foil instead, crimping the edge tightly to top edge of pan to seal.
