  • Heat dressing in Dutch oven or large deep skillet on medium-high heat. Add chicken; cook 5 min. on each side or until chicken is evenly browned on all sides. Remove chicken from skillet; set aside.
  • Add onions, bell peppers and ham to skillet; cook on medium heat 5 min. or until vegetables are crisp-tender. Add beans, tomatoes, corn, jalapeño peppers and cumin; mix well. Top with chicken.
  • Bring to boil; cover. Simmer on low heat 20 to 25 min. or until chicken is done (165°F). Serve over rice.

Special Equipment Needed


Prepare as directed, substituting 8 small boneless skinless chicken breasts (2 lb.) for the whole chicken, and reducing the final simmer time to 10 to 15 min. or until chicken is done.
