HEAT oil in large skillet on medium-high heat. Add chicken and garlic; cook and stir until chicken is lightly browned.
ADD broth, broccoli, red pepper, carrots, squash and black pepper. Bring to boil.
STIR in rice. Return to boil. Reduce heat to low. Cover. Simmer 5 min. Remove from heat. Let stand 5 min. Stir in cheese.
