  • Cook potatoes and cauliflower in boiling water in large saucepan 20 min. or until tender.
  • Meanwhile, cook chicken in large nonstick skillet sprayed with cooking spray on medium heat 3 to 4 min. on each side or until golden brown. Transfer to plate; cover to keep warm.
  • Add dressing, mushrooms and peppers to skillet; cook and stir 6 min. Add tomatoes; simmer 8 min. Return chicken to skillet; spoon sauce over chicken. Simmer 3 min. or until chicken is done (165ºF).
  • Drain potato mixture; return to pan. Add reduced-fat cream cheese; mash until potato mixture is fluffy. Serve topped with chicken, vegetables and basil.

I read the reviews and thought this was going to be some excellent recipe. Seemed a bit bland to me. Both my husband and I normally don't add salt to our food, but we did. Even my 1 year old who normally eats everything only ate the chicken. It was "ok". Wasn't the worst I've had - but certainly not a knock-out recipe.

Rated 5 out of 5 by from This was really good! This was really good! By cooking the chicken and cutting up the peppers ahead of time, it didn't take long to put it together for Sunday dinner. We did double the potato recipe for my husband's sake, but I adjusted my serving accordingly, and it was plenty for the 2 of us for 2 meals. I don't think the fresh basil made enough difference to buy it next time.

I didnt use cauliflower in the mashed potatoes however.. just not a fan of them. I used thin breasts and good thing I did b/c normal size breasts would have been too thick... The only thing I would do differenly is tenderize my meat, other than that it was very tasty.. Will make again.

Rated 4 out of 5 by from Very good, and very good for you! Very good, and very good for you! I didn't have a can of Italian Diced tomatoes. So, I added 1 tbs. of Italian seasoning and 2 minced garlic cloves to the tomato when I added it. I also had to add a little S&P to the potato/cauliflower mash. My husband loved it, and he's so hard to get any veggies into!! Definitely will make again.

Rated 5 out of 5 by from My family loved this. My family loved this. For those that are saying you left out the cauliflower because you don't like it, you are missing out. I have a kid that HATES cauliflower, but she ate tons of this and said how good it was. THEN I told her what was in it. :-) The chicken cacciatore part of the recipe is fabulous. Making it again tonight.

The potato/cauliflower mixture is wonderful. Tastes like normal mashed potatoes! Will most certainly make again! Thanks Kraft!!!

Rated 5 out of 5 by from Amazing recipe! Amazing recipe! For twenty years my husband has hated peppers in anything, I made this and he said he LOVED it! (I just used the yellow peppers.) The potato's were incredible as well. I will definitely make this again!
