What You Need

1/2
cup  chopped onions
1/4
cup  chopped green bell peppers
1/4
tsp.  crushed red pepper
2
cups  shredded cooked chicken
2
cups  mashed potatoes
1/2
cup  KRAFT Shredded Monterey Jack Cheese
1
 egg, beaten
25
 RITZ Crackers, crushed (about 1/2 cup)

cups  oil

Make It

COOK and stir onions, green peppers and crushed red pepper in skillet sprayed with cooking spray on medium-high heat 10 min. or until onions are crisp-tender.

COMBINE chicken, potatoes and cheese in large bowl. Add onion mixture; mix well. Cool completely. Shape into 15 (3-inch) sausage-shaped croquettes. Dip, 1 at a time, in egg then in cracker crumbs, turning to evenly coat both sides of each croquette.

HEAT oil into large saucepan to 375°F. Add croquettes in batches; cook 3 min. on each side or until golden brown on both sides. Drain on paper towels. Serve warm.
