  • Cook and stir chicken in large skillet sprayed with cooking spray on medium heat 4 min. or until done.
  • Add onions and peppers; cook 4 to 5 min. or until crisp-tender. Stir in salsa and beans; cook 3 min. or until heated through, stirring occasionally.
  • Spoon 1/4 cup chicken mixture onto half of each tortilla; sprinkle with cheese. Fold tortillas in half. Add quesadillas, in batches, to separate large skillet sprayed with cooking spray; cook on medium heat 2 min. on each side or until lightly browned on both sides.

Variation

Prepare as directed, substituting 1/2 cup drained canned corn for the black beans. Serve topped with shredded romaine lettuce, chopped fresh tomatoes and chopped fresh cilantro.

Top each serving with 1 Tbsp. BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream.

Note

If you have only 1 large skillet, cook chicken mixture in skillet as directed, then transfer to bowl; cover to keep warm. Wipe out skillet, then spray with additional cooking spray and use to cook quesadillas as directed.

We just moved to Italy in January and since that time we only found one Mexican restaurant (Ok but bland) this recipe was a much needed change... A bit hard to find all the ingredients out here but I did) I will DEFFINITLY make this again… Thanks Kraft.

I like fajitas and I like quesadillas but combining the two into one recipe just didn't work. 6 inch tortillas are too small IMO. They didn't hold the ingredients in very well. I wouldn't make this recipe again.

Rated 4 out of 5 by from Great easy recipe! Great easy recipe! I made this the the other day for dinner, with a few variations. I used pork and & salmon instead of chicken. I also broiled the quesadillas- which was much easier than frying and less fat, too! They turned out wonderful! Good job- Kraft!

I did not make it with peppers and onions and used the whole can of black beans and more salsa. I can't wait to make it again, it is so easy!

The second time I rolled them up as burritos and put them in the oven for a little bit to melt the cheese and I think they were easier to eat, less stuff falls out of it.

Rated 5 out of 5 by from These are so simple and an easy pleaser for the entire family. These are so simple and an easy pleaser for the entire family. I always use the Oscar Meyer Deli Fresh Southwest Style chicken strips for even less prep time. They add a nice little kick even without onions and peppers.
