I made my own roasted garlic olive oil to cook the red peppers and onions. I served this dish with sour cream, avocado dip, chunky salsa, warm tortillas and tortilla chips and the Strawberry-Kiwi Mock margarita that is mentioned along with this recipe. This recipe was one of the best I ever made and everyone loved.

I also used lettuce, tomatoes, and sour cream, in addition to the salsa sauce thats required in the recipe. Also I used chicken breast, cut into strips and marinated in teriyaki sauce.

Chicken Fajitas are our favorite, the kids don't care for the onions or green peppers, so we just throw some lettus on there & tomatoes, its a big hit with them. This meal is quick and easy to make, & us adults love it just the way it is.

This Recipe is very goo to feed a lot of people if you double it up and serve with rotel dip. I fed about 15 people with it. It is something that is simple enough but it is also very elegant when garished with fresh herbs.
