  • Pour 1/4 cup dressing over chicken in shallow dish; turn chicken to evenly coat both sides of each breast. Refrigerate 10 min. Meanwhile, combine tomatoes, cheese, mint and remaining dressing.
  • Remove chicken from dressing; discard dressing. Cook chicken in large nonstick skillet on medium heat 6 to 7 min. on each side or until done (165ºF).
  • Cover platter with spinach; top with chicken and tomato mixture.


Prepare using chopped stemmed kale or your favorite mixed greens.
