  • Blend first 4 ingredients in blender until smooth.
  • Cook chicken in Dutch oven or deep large skillet on medium heat 3 min. on each side or until browned on both sides. Remove from pan; discard pan drippings. Add potatoes and onions to pan; cook 3 min., stirring frequently. Return chicken to pan. Add chipotle sauce; stir to evenly coat. Cover.
  • Cook on low heat 20 min. or until chicken is done (165ºF) and potatoes are tender. Top with cilantro.

Variation

Prepare using 6 boneless skinless chicken thighs or 6 boneless skinless chicken breasts (1-1/2 lb.); increasing cooking onions and potatoes 5 min. and reduce cooking mixture to 15 min. from 20 min. or until chicken is done (165ºF) and potatoes are tender.

Purchasing Chicken

When purchasing a chicken, look for one with a moist skin, tender flesh and fresh smell. Make sure that the chicken is very cold to the touch and that the package is not torn or leaking. Place chicken package inside a plastic bag before placing in the grocery cart to keep any juices from touching other food items.

I was able to add more cream cheese and chicken broth (plus some sour cream) to mellow it out and then it was delicious!!!
