  • Blend broth, 1/4 cup dressing, cilantro, nuts and chile in blender until smooth.
  • Heat remaining dressing in large nonstick skillet on medium-high heat. Add onions; cook 5 min., stirring occasionally. Add chicken; cook 2 min. on each side or until browned on both sides. Stir in mushrooms; cook 5 min. or until liquid is evaporated, stirring occasionally.
  • Stir in broth mixture; cover. Cook 10 min. or until chicken is done (165°F). Serve over rice; top with sour cream.

Cooking Know-How

When cooking chicken use tongs. This will prevent the juices from running out, resulting in a moister, more flavorful cooked product.


Substitute 1 tsp. granulated chicken flavor bouillon dissolved in 1/2 cup boiling water for the broth.

Special Extra

Garnish with additional chopped fresh cilantro just before serving.

Rated 5 out of 5 by from I loved this. I loved this. It was so good. Definitely spicy, but I love spicy. I used boneless, skinless chicken thighs for the meat. I also substituted a jalapeno pepper for the serrano pepper cuz I couldn't find it. I just cut off the stem and threw the whole thing in the blender seeds and all. Yum.
