  • Mix tomatoes, onion, chili peppers, garlic, oregano and bay leaf in 4-quart saucepot. Cook on medium-high heat 10 minutes, stirring occasionally.
  • Add chicken, chicken broth and lime juice. Bring to boil. Reduce heat to medium-low; simmer 30 minutes. Remove and discard bay leaf. Season soup with salt and black pepper to taste.
  • Serve in soup bowls topped with cheese and cilantro.

Special Extra

Serve garnished with dollop of BREAKSTONE'S or KNUDSEN Sour Cream, lime slices and fried corn tortillas.

I dont follow recipes well...I bought a cooked rottiserie chicken and put in a pot with water to boil for an hour, drained and used that as the chicken stock, pulled the chicken off the bones and added rice to the recipe. I also couldnt find chipotle peppers, so i used can of diced tomotoes with chilis and added a little cayene pepper. I thought it had a big lime flavor at first, but adding salt mellowed it out and made it perfect. Right before serving, I added fresh avacado pieces and cilantro. Absolutely going to make again! Will probably add zucchini and black beans next time too.

I really liked this soup...but I ended up altering it significantly because I didn't have everything on-hand. I used red, green & yellow peppers, because I did not have any chipolte peppers. I also added a little chili pepper too. I also added the black beans like others suggested. I only added lime juice from 2 limes...whatever that is the equivalent of...but I thought it could use more. I REALLY thought the cilantro finished it off! I made it with tortilla chips & cornbread! Yum!

Rated 3 out of 5 by from I thought that there was too much lime in this recipe. I thought that there was too much lime in this recipe. Once I added more water to dilute the lime flavor it was better. My husband felt that it needed something else; such as another vegetable. I'll probably try this recipe again, but I'll add corn or beans to the mix. I did not add the chili peppers to this recipe. Although, I did add crushed red pepper to my bowl of soup, which had a nice bite.

Rated 5 out of 5 by from I made this tonight! I made this tonight! Decided to couple things for a heartier soup - 1 can each: corn, black beans and green chilis. Tabasco sauce is great for spicy lovers! ~Make sure to use FRESH lime juice not the pre-mixed which is typically highly concentrated. If you do make this mistake - dilute with additional chicken stock and something spicy to counteract the sweet/sour.

Rated 5 out of 5 by from Great soup with a fresh taste and a bit of a bite! Great soup with a fresh taste and a bit of a bite! We added some corn (always trying to add those veggies) which was very good. We also cut some tortillas into strips, baked them in the oven while the soup cooked, then crumbled the strips on top of the soup before serving. If you love spicy food, this one's for you.

There is to much lime in my opinion I would use 1/2 of what it calls for and then taste it and add more to taste. I used jalapeño tomatoes and it was a great touch of spice! I think I will make agian but cut it in 1/2 because I'm the only one eating it!

I made this last night for my family and I used a Serrano pepper instead of Chipotle and I did not have any cilantro but i thought that the soup was pretty good. My husband is from Venezuela and thought that it was excellent. I will probably be making it again for him more than for myself.

Woaza! looks the perfect recipe! jus add bit more seasoning (cajun is great or a bit of spicier stuff) and use chicken stock - always works better. i'd seve with a good crusty bread and refreshing fruit salad. oooooh, can't wait ( and who'd think it was healthy - me, and health - Ha!:D
