Substitute 1 pork tenderloin (1-1/2 lb.), cut into 6 pieces and pounded to 1/4-inch thickness, for the chicken breasts.
To flatten chicken breasts or any other meat, place chicken in large freezer-weight resealable plastic bag. Pound chicken with meat mallet to desired thickness. The bag will contain the liquids from the chicken, helping to minimize the mess. The flattened chicken can then be stored in the sealed bag in refrigerator or freezer until ready to be used.
