  • Heat oven to 400ºF.
  • Place chicken on foil-covered baking sheet; top with salsa. Bake 20 min. or until chicken is done (165ºF), topping with crushed chips and cheese for the last 5 min.
  • Meanwhile, cook bacon in large skillet until crisp. Remove bacon from skillet; drain on paper towels. Discard drippings from skillet. Add onions to skillet; cook and stir 5 min. Stir in tomatoes; cook 4 to 5 min. or until tomatoes begin to pop, stirring occasionally. Add rice; cook 2 to 3 min. or until heated through, stirring occasionally. Stir in bacon.
  • Top chicken with sour cream. Serve with rice mixture.

We made over an easy meal that will save you 120 calories and 9g of fat, including 4g of saturated fat, per serving by decreasing the amount of bacon and preparing the recipe with baked tortilla chips, KRAFT 2% Milk Shredded Sharp Cheddar Cheese and BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream. And as a bonus, these easy-to-make changes didn't sacrifice the flavor of the original recipe.

Substitute

I never alter your recipes, they are already fabulous and I think it disrespectful to change them but, I ran out of brown rice and I improvised with Spanish rice in a box. Not as healthy as brown rice but very delicious. The crushed chip,bacon,salsa,grape tomato, sour cream combination was outstanding! Family has already asked again for it twice. I always expect the very best from Kraft and I have never been let down yet! Thanks for great products and terrific recipes!!!

They were practically fighting over the last bite and the crumbs in the pan! Next time I will use a bit more tortilla bits and cheese cause the crunch was a nice addition to the wonderful flavor. The rice wasn't that great on its own, but if you ate it together with the chicken and sour cream it was all great. Easy and quick to fix, and only 8 weight watcher points! This one's a winner!

It spiced it up a little. Without that I think it may have been a little bland. Other than that I followed the recipe, and the results were delicious. My husband said we have to make this again.

I added chopped fresh parsley to my rice for more color and left out the bacon because I didnt have any on hand, but everybody liked it without anyway.

We made this last night and I was surprised at how easy it was and how much we all liked it - even my 5 year old! We didn't have rice on hand, so we just prepared the chicken part of the recipe and it, alone, was a hit!
